I was using the 2021 version which is the version my company uses, then update to September 2021. When reinstalling May 2021, I have an error and cannot use it.

I find something internally.
This issue has been confirmed as a known issue internally (#ICM: 279023936).
To workaround this issue on Power BI Desktop (Optimized for Power BI Report Server) for now, you can clear cache.
Detail steps:
1. Uninstall the May 2021 version Power BI Desktop RS;
2. Navigate to this path: C:\Users\<USER>\AppData\Local\Microsoft\ and delete the Power BI Desktop SSRS entire folder;
3. Re-install the May 2021 version Power BI Desktop RS and now, it'll work without any glitches.
Please be patient to wait for fixing. If there is any update, I will post it here.

What do You mean with "clear cache" please?

Please check the detailed information by "Copy details to clipboard" and then paste it into a .txt file, for example. Then please find out where the error occurred.
For data security, please don't paste your log file here.
In addition, have you tried both x64 and x86 version?
