Is it possible to limit some of the export options?
Currently has Word, Excel, PowerPoint, PDF, etc.
Can some options be removed for the user, on a report by report, basis?
No, you cannot easily turn these off on a report by report basis.
You can turn individual export types off completely at the server level
(see this question from a few days ago https://community.powerbi.com/t5/Report-Server/Turnoff-the-export-options/m-p/2212681#M21934)
Or you could manually build an expression into the Hidden setting on every table/matrix in your report to hide the output for certain types of exports. So the report would still run and it would probably still execute the queries against the data source, it would just produce a blank report (you could even create a text box with a warning message that only became visible when exporting to those selected exports to tell the user that the output was blank on purpose)
