Is there any possibility to "convert / open" a .pbix saved in the October 2020 version in the Power BI Report Server May 2020?

If you still have the install pack of the may version, you could just uninstall the October version and install the may version. Then open the pbix with new installed may version desktop for rs.

Unfortunately there is no way to convert or downgrade a pbix report to an older version. You can copy all the queries from the advanced view in the Power Query editor and copy all of your dax measures/columns/tables and paste them somewhere like notepad and then paste them back into a new pbix in the old version. That will save you a bit of time.
