Is there a way to manage versions of a .pbix file published on my Power BI Report Server (on-premises) please? Any plugin ?

You can use ReportingServicesTools. It's PowerShell module for RS.
Try to use import and upload functions to prepare manage version mechanizm.

I'm not aware of any plugins or tools that do this well.
We use a powershell script that we run every 15 minutes. It downloads any amended or new reports onto disk and saves them with a timestamp. It doesn't catch every version but it does mean you have more than the last version on the server.
You can also use it to do a full backup of the server.
