I have created a dashboard with 2 Excel documents as the data source. Obviously, I can modify the data in the spreadsheet and refresh the Desktop version very easily. However, I am struggling trying to find information on how to have the users refresh the dashboards from the Report Server after they have changed the spreadsheets. I read one thing that said I needed to upload the doc to OneDrive! That won't happen in my workplace. It seems there should be some other solution that I am just not finding anywhere. Most of what I've found is for those using the Cloud Service, not on premise version. 😞 Any help would be greatly appreciated!

In your scenario what you need to do is have a share where the PBI Report Server service account has access to. That is where your spreadsheets should reside. That way, the refresh job will pick up the XLSX files from there when the datasets refresh.
U can try change sources using Powershell ReportServerTools module. Anyway u need access to folder with source xls.
