Since last 2 updates of Power BI, sometimes I open the power query editor and the headers of the columns are hidden and I´m not able to do operations like unpivot.

According to your description, it seems that this problem occur by accident. So if you re-open the Edit Queries, will this work? In addition, what is your desktop version? By the way, you should know , it is hard to find the root factor of occasional error.
