Hi,
So I changed the date type in Power Query Editor from Date Time to just Date and that is how I want it to be displayed in my visualizations:
Why does PBI now change my data and add in the day of week and month and format it this way when I Close & Apply to the data?
How can I retain the simple x/xx/xxxx format?

It's only the format that you need to set in Power BI.
Select the Column; then change it under Column Tools
