When Importing a SP list some values display "List" rather than actual value within the list

While importing in transform data, a few columns display "List".  I select the 2 arrows button in top right and select "Extract Values" and selected every delimiter listed, but always results in error, (Expression.Error: We cannot convert a value of type Record to type Text).

How can I pull in the value from the list, when directly linking to the SP List?

I know as a work around if you go directly to the SP list and select "Export to Power BI" which creates a data set then connect to that but I do not like that option.
