In SPO lists or document libaries you can edit the properties on an item and enter notes. Multiple notes can be entered over time.
When I look at the data brought back by PowerBI it only shows the most recent note in the Notes1 field.
Is there a way to get the full notes history, is it a child table I need to expand somewhere?

Based on my test, the built-in SharePoint connectors in Power BI Desktop don't contain the full notes history, as your post, it is possible to show the most recent note.
