These two columns were dropped from the source table. The columns drop seamlessly in the model after refreshing, but Power Query shows error. This is a new issue as I have done these sorts of changes literally hundreds and hundreds of times in the past without seeing this error.

It was a credential problem.
I did. That wasn't it. I needed to navigate to the report credentials, sign out and sign back in again.
Have you checked any previous steps depending on the step where you removed the columns ?
