Hi,
I needed to make a change to some of my data in a query. So I applied a filter to the data and used the Replace function to change the fields I needed changed (I had to apply a filter as I had the same data/wording against multiple fields which needed amending to something else).
However I now can not remove the filter - the remove filter option on the fields I applied filters too is greyed out
Any idea how I can remove the filter so that I can see and use all my data again?

In M-Code (Power Query), once you apply the filter, that data filtered out is gone. To do what you describe, you need a different method.
If you want to change certain sub-sets of your data, one method is to use Table.Group to create the subsets; then edit each subset. Usually this will need to be done using the Advanced Editor.
You might be able to do some kind of Table.Join with the step prior to your filter, but how to do that, and whether it is better than Grouping, depends on specifics.
In the right side of Power Query Editor, you would seea query settings panel which shows all the steps you have applied. You can try to remove the filter by clicking the cross signs on those mentioned "filtering" steps.
