Power BI dataset
I was hoping to use Power Query or Power BI to create a dataset and then connect to that dataset as itself as a datasource for other applications. Is this even posible?
Not really what Power BI is for. If you really really have to, you could do that in excel. If you need to spawn a dataset, Excel does offer a VBA engine.
Many superior ways to do this however, but Excel and VBA is often the quickest for a lot of people.

One option is to connect to Power BI dataset in Excel after installing Power BI publisher for Excel, and you can analyze that data in Excel using PivotTables and PivotCharts.
