Your best bet is to look at the language spec:
It is pretty compresentitive as far as the syntax goes.

If you want to get dynamic date range in M code, you could try to use parameter in it. You could refert to Pass parameter to SQL Queries statement using Power BI for details.
In addition, you also could refer to Introduction To Power Query M Code and basics-of-m-power-query-formula-language or other toturial in YouTube for details.
