On the first steps of the query, identify this record column (FieldValuesAsText)
Expand this column by checking Editor (user who last modified) and any other column you need.
And that's it! 🙂

The field you refer to is not in the table retrieved in that initial query
If you refer to this link you will see the initial data under the item 3 of "Connect to a SharePoint folder from Power Query Desktop"
