Since you are not having higher version of Excel, Use Power BI Desktop which is free and can be installed from
Here, you can work with your pdf document, transform the data in Power BI Desktop, then you can right click on your table name on right - Copy table and paste into Excel (there are many ways to get data into Excel but this is the simplest)
