all that can be done in the Power Query Editor UI.
Start with getting all files of a folder - you already have this step. Then click on Combine Files next to Content.
The following mask will appear. Click on OK.
The Power Query Editor creates many steps while transforming your data. The first column contains the file names.
FOLKS, the correct solution to it is this :
after you combine the files, you need to pay attention to the APPLIED STEPS pane, and find where the transportmation removed the columns you wanted, most likely the FILE DATE column, you can edit it back via right clicking the little wheel on the transformation step on the mentioned APLLY STEPS pane
