I created a connection to an onprem SQL Server in Fabric:
In Fabric Data Factory, I created a data pipeline and added a Copy activity. But when I went to set the onprem SQL Server as the source, the connection does not appear:

Just so I know for sure, when you say On-premise Data Gateway, are you referring to:

This is a very hard blocker for many large enterprise customers.
on-premises access needs On-premises Data Gateway, which is not supported yet. You can refer to Differences between Data Factory in Fabric and Azure - Microsoft Fabric | Microsoft Learn
