High contrast panes for Fields, Visualization and Filters
I am currently doing a course where the instructor has high contrast panes for filters, visualization and field panes but I cannot see how to achieve this - I current have aPower BI with a free trail...

In the service, there is an option in the top right under "View" that has the contrast actions.
In Power BI Desktop, you can use the High-Contrast theme to change it there.
The third way I know is if the individual's PC has "High-Contrast" turned on then everything (not just Power BI) will be high-contrast.
