Tables are disappearing in the Lakehouse when using SSMS or Azure Data Studio

We have some lakehosues with shortcuts to different storage accounts (setup via Service Principal) and within the lakehouse we have shortcut delta tables.

I can see those tables in the Fabric UI and can initially see them in the database within SSMS and Azure Data Studio but after a while they are disappearing where I can't query them from those tools. They are still in the lakehouse as I can view/access them in the Fabric UI, just not in the database tools.

I could be wrong, but I think this issue started appearing in the last few weeks.
