Hi mendomar
Thanks for reaching out to the Microsoft fabric community forum.
To use sensitivity label settings in Fabric they first need to be enabled by the tenant admin from Fabric admin portal.
Go to the Information protection section, expand Allow users to apply sensitivity labels for content, and turn the toggle switch on to enable the feature.
Licensing requirements are an Azure Information Protection Premium P1 or Premium P2 license is required to apply or view sensitivity labels from Purview Information Protection. Azure Information Protection can be purchased either standalone or through one of the Microsoft licensing suites.
To be able to apply labels to Power BI Fabric items, a user must have a Power BI Pro or Premium Per User (PPU) license in addition to one of the Azure Information Protection licenses mentioned above.

Hi mendomar
No, sensitivity lables does not automatically transferover between Tableau and Micrsoft Fabric. Bcz, Tableau and Fabric are 2 different frameworks. So, you have to apply sensitivity lables manually while migrating data to Fabric.
If you want to know more about Fabric how to apply sensitiivty lables pls read this thread Apply sensitivity labels to Fabric items - Microsoft Fabric | Microsoft Learn
THank you!
