I have run into an error where a series of pipelines which worked last week, all get stuck in this 'queued' state. I cna do preview and it brings data back and I can see that the query hits the sql server but I cannot find a way to troubleshoot the error any further.

The issue was caused by an application called Airlock, which monitors and blocks sucpicous applications. When using the preview function the application (Airlock) did not trigger a warning but once you try adn processing xk records it would.
Soultion was to put an exception of the gateway program folder.

In order to understand your specific data copy scenario, could you please share some more details about your copy data activity. Could you clarify if you are trying to connect on-prem SQL server or cloud hosted SQL server?
If you are using on-prem gateway ensure that it still active.
Try installing the latest version: Download On-premises data gateway from Official Microsoft Download Center

Thank you for the support. I had already tried the above and it turned out to to be network/server security issue
