In a Matrix or a Table I would like the ability to vertically align the header at the top (which is default currently), centered, or bottom.

I can't believe this option still doesn't exist in Power BI. In Excel, you have complete alignment control within the cells. The same is true for other data visualization tools.
Note: There are several users requesting the same idea in numerous Idea Community posts.
