Provide change history for Eventstreams

Currently, Eventstreams only display the last modified date, making it difficult to understand the full history of changes applied to a stream.

Having a change log or journal table that tracks all modifications would be extremely helpful for troubleshooting. If an issue arises, it would be much easier to review what changes were made, who made them, when they were applied, and the type of change. This visibility would significantly improve the ability to diagnose and resolve issues efficiently.
