Agreed - very annoying not being able to control what you want to total and what you don't want to total - looks horrible with 3-4 columns all trying to total. End up with 4 total lines in a row with the same number

I like to use the Matrix because of the formatting. I do not want to subtotal on every column. The report is messy with multiple total lines with same number.

I would like to have the ability to remove total for specific columns. Right now, the totals are shown for all columns (when property 'General -> Total row' is set to 'On').

Agreed, the Excel functionality for the subtotal customization should be implemented, right now the Matrix is not usable with several lines of non-descriptive subtotals. I am really surprised that Power BI is a Microsoft product yet they took several steps back from the functionality already implemented in other products they provide.

Hack solution - just make all the font the same color as the background. Not the most elegant solution but looks way better than all the subtotals.
