This seems like an obvious setting to have. And I have to use the matrix because I have a dimension field in my column header.

Currently, it is not possible to turn on word wrap for column and rows in a matrix.
As stated in this blog, there is a word wrap option for Table column headers in Power BI Desktop. And Power BI team is working on the feature that add word wrap option in other visuals such as Matrix, you can vote the following ideas about this feature.

Not sure if I should reply here or start a new topic, but the Word Wrap does NOT work in all cases for Matrix Vizualization. Our customer perceives this as a bug (and rightfully so) as word wrap works for some rows but not others.
