I have multiple MYSQL queries in my Power BI Desktop file.
Is there a way to have it refresh only 1 query instead of refreshing them all?

I did find the option when editing queries. You can check it to refresh - or have it not refresh.
Click on Edit Queries - choose the query you want to turn off - then click All Properties on the right
