I am unable to connect to Dataflows in PBI desktop. Worked fine yesterday, looks like an updated version has installed itself and today I can no longer connect. The app environment is still working. ...

Same here ! all of my semantic models are corrupted !
Needed to replace in M code the connector PowerPlatforms.Dataflows() by PowerBI.Dataflows()
you could have downloaded PBI May version, it still works there
