DataFormat.Error: The input couldn't be recognized as a valid Excel document.

After mapping new source locations, to identical copies of the source files, and even when using the transfered PBI file to load network available XLSX files. All queries error out with the above error.
All of the source excel files load fine in excel. Re-saving the files as XLSX does not resolve the issue. All of this leads me to believe its an issue within the PBI file that has been moved to a different machine.
Steps to re-create.
1. Build a report on one machine with XLSX data sources.
2. Move/Copy the PBIX file to a different machine.
3. Adjust source location information to reflect new local source location(copy of the original source XLSX)
3a. Source file is hosted on a network share and no source location information needs to be changed.
4. Attempt to refresh the data using the Refresh button in design view.
4a. Attempt to refresh data preview in Query View.

You need to replace the file path as UNC path. For example, you share the Excel and get the path like below,

I had written this off as the issue yesterday because I was convinced this would not matter for a local copy. 😄
