I've faced the following issue with the waterfall graph:
When I build a simple waterfall graph with many breakdown components (>200) it doesn't show separate components in the correct ascending or descending order. In the example attached, Customer 3 is the major FC_2 vs FC_1 growth reason but it's not indicated on the waterfall (the same for the smallest components)
However, when I limit the number of breakdown components to less than 200 (example file in link below) the breakdown works properly and shows correct components.
How can I address the issue when I have >200 components?

The default waterfall chart only can show 20 breakdowns. And it will show at random. For "199 item", there aren't many customers either, like customer 2, customer 28.
If you want to show entire breakdowns, it is better to change a custom visual like Waterfall chart-xViz.

As we are prohibited from using third-party custom visuals, we are not able to use the custom waterfall chart you so kindly linked.
1. Is it possible to make the breakdown of the default waterfall chart non-random?

I appreciate you taking the time.
We have tried different filtering approaches (i.e. not only the Top N filtering you so kindly suggested).
Regrettably, we do not find filtering to be a satisfactory solution, as it changes the totals.
We would like to keep all the numbers the same while having better control over which components (customers in this case) are displayed in the chart.

The idea: Sort by breakdown in Waterfall may meet your requirement. You could vote it up to get the feature fixed quickly. You also could submit a new one. https://ideas.powerbi.com/forums/265200-power-bi-ideas
