Waterfall Chart -Two Category

I'm sorry, but it's true that you can only place one value in the waterfall chart officially provided by Microsoft, which is limited by the design of the waterfall chart itself. If you are trying to compare the difference between SUPPLY and DEMAND, then you can choose to use MEASURE to do the calculations and then put the MEASURE into the graph.
Also I don't understand your sentence "and the current stock measure to the Starting Value field", there is no such field in the official waterfall chart provided by Microsoft, may I ask which waterfall chart you are using?
If it's custom visual, then I'm sorry that I may not be able to provide you with technical support, as custom visual has no official documentation for a specific introduction.

Thank you for your response. I have a question regarding the waterfall chart. I want the chart to display the increase or decrease of net effect. For example, if the starting net effect is 100 and decreases every week, the waterfall chart should show the decrease bars. However, the chart currently shows increasing bars as the value is positive. Is there any way to change this behavior?
