After the latest update, my PBI Desktop install is acting a little wonky.
Normally I'd just uninstall / reinstall. But -
Is there a guide to manually uninstalling?

It should because that you installed an app version:
Go to start menu>search>power bi >uninstall:

Did you install using the MSI?
Manual uninstall: C:\Program Files\Microsoft Power BI Desktop, right-click, delete.
Right, it should be under add / remove programs, but isn't.
No I installed via the regular .exe/
So just delete the directory + (I assume?) delete anything from the registry with power bi on it?

I can see the option in add remove program to uninstall power bi
