I am strugeling to show 2 separate graphs from the same table. One graph with a date slicer (via the date table) and one graph that should show all categories excluding the date filter. Both graps should filter by category a visual table (same for both).

Hope you have a solution for this as I have tried to make a separat table for the other graph, but the data filte still filtering both graphs.

If you the two visuals are from the SAME table, and that one table is related to a Date dimension, like I suspect it is, AND you have a date slicer on the page, THEN you should be able to manage this is "Edit Interactions" on the XX menu. First go to the Format menu and you will find "Edit interactions" as the first button on the left. Next click on the Date slicer, then for the table where you want to NOT be affected by that slicer, click the "None" icon that shows up in its upper right corner. That icon then switches from a hollow circle with a diagonal line through it to a filled circle to indicate the interaction relationship FROM the Date slicer. Lastly, turn off "Edit interactions".
