Yes, we can add more columns for categories(such as additional numerical categories) and values to provide additional information.

Can we sort the numerical columns via the column headers (similar) to tables. If not are there any optional Gantt charts with the same functionality?

Maybe you can try to create an index in power query and sort by index.
