Table visual summarize options are missing

I've managed to disable the field summaries that should appear in the Table visual right-click menu

Here is the same table in (above / on the left) the dataset I'm working on, and (below / on the right) a new PBIX file just with that table, to show that the field can be summarized

Does anyone know what I've done to disable / hide the field summary options?

I've been building a JSON theme...is it possible to disable summaries in there?

I failed to reproduce your scenario. I wonder if you have updated Power BI Desktop to the latest version. You may create a support ticket here  for further help.
