Table and Matrix chart formatting

You cant not set fixed row heights for all rows on a table or matrix visuals.

You can turn wrap on/off to get single line.

You will find this control on Format / Visual / Values /  Text wrap.

Sorry this is not the answer you want. I do not work for Microsoft. You can request this as new feature.
