We are at the first steps of using Data flow and the question of security arise.
If I want to create a data flow using a table from our Data warehouse (source1) , an Excel file from Azure Devops (source 2) and a certified data set from EDW (source 3). How do we manage the authorization for those three data sources?
Then imagine that this data flow is stored in EDW2, how is working the security for this data flow?

For on-premise data sources, we need to add each of them into gateways. So you could manage the authorizations in the gateway. Here is the document about how to manage data sources in gateway.
There are a few known limitations to using Enterprise Gateways and dataflows, please see :
