Is it possible to see what sources a pbix file is using without manually opening it and navigating to data source settings?

"without manually opening it" - no. You have to open it somehow. You don't need to use Power BI for that though. PBIX files are archives, so you can use your favorite archive viewer and get the M code for all your queries (what you call data sources).
