I have a matrix like this.
I can right click and "Show data point as a table"
I want to reorder the data in this table. I also want to exclude certain fields from the table.
It is pretty straight forward how to reorder the values. However after making the changes I want when I Click Back to report and then again click Show data point as a table the changes to the ordering reverts to how I originally saw it.
Alos there is one value that I add and again when I come back in that value is no longer visible.

You can use bookmark and add a toggle button to switch in between normal matrix and Show data point as a table.

Based on my test, it is not possible to reorder the data in "Show data point as a table" dialog.
The only thing I could do is to sort data in the original matrix visual:
As @edugoncalves suggested, you could refer to the official document to add bookmarks instead.

I feel that it is not possible to save changes made on "Show data point as a table".
If it makes sense for your requirements, you can also try to address this scenario with bookmarks.
