You can use bookmark and add a toggle button to switch in between normal matrix and Show data point as a table.

Based on my test, it is not possible to reorder the data in "Show data point as a table" dialog.
The only thing I could do is to sort data in the original matrix visual:
As edugoncalves suggested, you could refer to the official document to add bookmarks instead.
