Progress bar for Text in Matrix view

I have created a matrix view like below and in the values I have Item Name (item1, item 2 and so on and item name are Text format)-

My input table has column as Quantity ordered and how much already picked. How can I get some kind of progress bar on Matrix underneath each item to show data bar as how much is picked or how much percentage is left to pick.

I saw some conditional formatting but could not get for text format , all I could see was data bar for numeric fields.
