I have created and processed an Analysis Database in a system with Greek Region and Language, SQL Server Analysis Instance is set to Greek Local, Analysis Database which created is also in Greek Locale and Cubes are also in Greek Local. However the PowerBI Desktop is showing measures in English Local with ($) sing instead of Greek Local with sing (€).

Power bi desktop will display currency symbols based on system region setting.
For your requirement, you can try to manually change display currency type at power bi format tab or system region settings.
