Does anyone from the Microsoft Product team know which changes were made between the Power BI Desktop versions
Microsoft Power BI Desktop 2.139.1678 (x64) (January 2025)
and
Microsoft Power BI Desktop 2.139.1576 (x64) (also January 2025)?

We have a custom deployment process in our organization. Currently the 1576 version is available for download for our report developers; we need to know whether we have to expect any severe problems with this version as long as the 1678 build is not installed yet.
As you already mentioned that the official Power BI Desktop changelog does not list any updates for versions 2.139.1576 or 2.139.1678, it's likely because that the differences between these two versions are minimal and may pertain to minor bug fixes or performance improvements.
