    Hi pey ,

    According to your description, taking the first two categories as an example, I create a table.

    In a matrix visual, put all categorie columns in the Rows and all date columns in the Values, expand the rows, get this:

    If you want all the dates in one column like below, you can select all date columns and unpivot them in Power Query.
