I am new to Power BI and I am trying to add new row Gross profit just based on cost and sales and get the results below. Any help is appreciated. Thanks

In Power BI, the basic cell is a column. We can't add a row in a table. We only can add a column. For your scenario, you can create a measure and a card visual to display the result.
Gross profit =
CALCULATE ( SUM ( Table[Budget] ), FILTER ( Table, Table[Category] = "Sales" ) )
- CALCULATE (
SUM ( Table[Budget] ),
FILTER ( Table, Table[Category] = "Income" )
)
