I cant figure out how to only keep one column on my card. some of the values on the card are long so I try to widen the card itself and it automatcally creates multiple columns, which I dont want. Is there a way to increase the width of the card without creating multiple columns?

We can try to meet your requirement with following workaround:
1. add a measure between fields
Measure = BLANK()
2. use a blank card visual hide the right part:
