Advocate IMissing "Sort By"
I have created some bar chart visuals and the "Sort By" option normally in the upper right corner of the graph only shows "export" and "remove". I have included a drill-down hierarchy.....could that cause my problem?

Do you have Date hierarchy in the visual?
I am able to reproduce your issue when creating a bar chart which includes a Date hierarchy as shown in the following screenshot.
Even I change the Date hierarchy to Date, there is no “Sort By” option in the upper right corner of the graph. However, when I include a Category(text data) hierarchy in the bar chart, “Sort By” option appears. Thus, it seems that the issue is related to the data type but not hierarchy, when you include data of Date type in the bar chart, there is no option to sort in it.
As stated in this article, when you use numeric data or text data, you can sort your visualizations however you want, and make them look like you want them to.
