We want to deploy Power BI connected to a SQL installed on the local network, and we want to know what publishing options exist. We know that one is to install a gateway on the same server or on a computer that has access to sql, and we don't have an Azure account to be able to connect directly. Thank you

You can install the gateway to the device which also in the same network and has permission to access to the database device.
In addition, the devices that enable proxy or VPN settings and can access to on premise database can also use to host the gateway.
If you can't install the gateway, you can consider to deploy web services that query data from your database and return table records to the users.
Then you can use power bi to getting data from this service and design report. This report should not require a gateway to handle refresh after publish.
