I am pulling two datasets - one from Sharepoint and one from Smartsheet. I want to create a new table that has Project Name, Status, Start and End Date that pulls in all the data from both locations. There is no join fields and there will not be. I just need one big list. All the merge tutorials are asking me about a Join, and I don't/won't have one. Any help?

This sounds to me like you'd want to union / append the two tables:
With that you can choose the tables you'd like to union. The attributes need to have the same names so PBI will match them for you.
