How would I go about re-ordering rows? I'd like to have the visualization have the same order as the Excel screenshot below. Therefore, Gross Potential Rent above Rent then everything else below that.
Is this possible?

I haven't found any features support custom the sort order of matrix visual.
In my opinion, I'd like to suggest you modify the category names and add custom characters to apply the custom sort order.
Sample:
Table 3 = SELECTCOLUMNS(Sheet6,"Price",[Price],"Category",[Category],"Slicer",SWITCH([Slicer],"Centre","2_"&[Slicer],"Model","1_"&[Slicer],"Region","3_"&[Slicer]))

Thank you for replying. If I change my data to 1_, 2_, etc, can I rename the colums on the visual to remove the 1_, 2_?

I haven't found a way to remove these prefix. BTW, if you remove them, the sort order will back to original.
For your situation, I'd recommend you to submit this requirement ideas forum to help improve matrix visual.
