Is there no way to show the +/- headers to expand or collapse column headers in a matrix in Power BI the same way you can for rows?

No, does not support expand/collapse (+/–) for Matrix columns which is a limitation.
+/– buttons only work for 'Rows Headers' in Visual formatting.
It's so infurating because 10 years later and it STILL can't do what a simple Excel Pivot Table can do... it just blows my mind.
No, Power BI does not support +/- expand/collapse icons for column headers in a Matrix. This is by design, not a missing setting.
A practical workaround is described below:
Matrix 1 → summary view
Matrix 2 → detailed view

This avoids the expectation of column expandability entirely.
